Irene Lena Foulk was born on November 25, 1919 in Hartington, Nebraska to Herman August and Eva Elizabeth (Neuhalfen) Korff. Irene married Chalmer Foulk on January 17, 1939 in Hartington. She lived in Hartington all her life except from 1962-1982 when she and Chalmer lived in Denver, Colorado. Irene was a cook at the Cedar café in Hartington, heading to work early in the morning to bake pies for the noon customers. After lunch, she was back in the kitchen rolling out pie crusts so the afternoon and evening customers could have pie. She then worked for the Hartington Telephone Company.
She was a member of Holy Trinity Catholic Church and loved to read. She also kept a day-by-day journal through the years, keeping track of the local news published in the Cedar County News and sending numerous birthday, anniversary and sympathy cards to people in the area. She and Chalmer loved to dance and play cards. Irene was a very kind & humble lady, always so appreciative of those who visited her in the nursing home.
Irene is survived by a sister Beulah and her husband George Ellestad of Pearl River, NY; nieces and nephews.
She was preceded in death by her parents, husband Chalmer Foulk of March 27, 2014 at the age of 96 years; three brothers Walter, Les, and Raymond Korff; four sisters Helen Bell, Edna Auch, Erma Korff, and Joan Olsen.
